Here’s my favorite mashed potato recipe – a wonderful way to avoid that crazed last minute potato boiling and mashing for Thanksgiving dinner. I’m really a little embarrassed to admit how much happier and easier a recipe has made my life. I used to stand over the stove cranky and cursing as I mashed the damn potatoes at the last minute. Here’s what I do now - the day before Thanksgiving I scrub five pounds of potatoes - but I don’t peel them. (As my father always said, Eat those potato skins, that’s where the vitamins are.) I boil them for about half an hour and when they’re soft I mash them and add butter, canned Carnation milk, yogurt, sour cream, onion salt and pepper – (enough milk/yogurt/sour cream so the potatoes are not stiff and dry, nor too runny.) Then I whip it all with a beater and pour into a big casserole dish and dot with more butter, And – voila! – an hour before dinner on Thanksgiving I pop it into the oven and feel ever so much calmer and thankful – and everybody adores it. The bad news is that each portion contains about 4,874 calories.
To Do: In your journal make a list of all the things that make you happy about your writing and being a writer. We’re so good at moaning and groaning about our work that it certainly can’t hurt to go all positive every once in awhile and write about what we’re proud of and grateful for.
